The process of roasting is an art; this will define the taste and color of the coffee. The roasting process has several steps:
First step:
The green beans are slowly dried to become a yellow color and the beans begin to smell
Second Step:
Occurs at a temperature of approximately (400°F) in which the bean doubles in size, and a shift in color to a light brown, and experiences a weight loss of approximately 5%.
Third Step:
Occurs at a temperature of approximately (428°F) the color changes from light brown to medium brown and has a weight loss of approximately 13%
Fourth Step:
Occurs at a temperature of approximately (446°F) color is crystal clear as medium dark brown, this step is much quicker sounding and the beans take on an oily polish.
Fifth Step:
Is taking the coffee out of the roaster and into the cooling machines so it will not get bitter.
Espresso:
Occurs at a temperature of approximately (460°F) and the color is dark but not burned.
Our beans are well handled and stored green until it is time to roast. This helps keep the coffee fresh and gives it more shelf time. Our coffee is hand roasted in small batches and cooled allowing consistency and customization.
Our coffee is high quality, versatile and roasts up well from medium to very dark espresso. The flavor is intensified by the types of the roast.
